[Vitamin and minerals consumed food group by Chilean university students].

Abstract:

INTRODUCTION:The lifestyle changes in college, students go through periods of physical inactivity and irregular meal times, which leads to increased consumption of processed foods and fast food. OBJECTIVE:To calculate vitamins and minerals intakes for groups in the diet of Chilean university students. METHODS:We studied 654 university students (18 to 24 years, 54% female), a 7-day food frequency questionnaire was used for dietary assessment, the information collected was classified into 12 groups representing each set of food, and then nutrient intake was determined. RESULTS:The main results were: (a) women had lower intake of most micronutrients than men (b) pantothenic acid, vitamin B12 and E, calcium, magnesium and iron are nutrients that showed mean intakes below the daily recommendations, (c) the consumption of bread is essential for the supply of B vitamins, iron, copper and selenium. CONCLUSION:In the usual diet of college students, bread is a key to the dietary intake of B vitamins, iron, copper and selenium, as well as dairy products for calcium, meat and fish for vitamin B12 and zinc; vegetables for vitamin A and fruits for vitamin C. :Introducción: La etapa universitaria es un proceso en el cual las personas pasan por periodos prolongados de inactividad física y horarios irregulares de comidas, lo que conlleva al incremento en el consumo de alimentos procesados y de comida rápida. Objetivo: Fue determinar el aporte vitaminas y minerales por grupo de alimentos en la alimentación de estudiantes universitarios. Métodos: Se trabajó con una muestra de 654 estudiantes universitarios chilenos (18-24 años, 54% mujeres), a quienes se les aplicó un cuestionario de frecuencia semanal de consumo de alimentos, la información recolectada se clasificó en 12 grupos representativos de cada conjunto de alimentos y se determinó la ingesta de vitaminas y minerales. Resultados: Los principales resultados fueron: (a) las mujeres presentaron menor ingesta de la mayoría de micronutrientes que los hombres; (b) el ácido pantotenico, la vitamina B12 y E, el calcio, magnesio y el hierro son los nutrientes que presentaron ingestas promedio inferiores a las recomendaciones diarias; (c) el consumo de pan es fundamental para el aporte de vitaminas del complejo B, hierro, cobre y selenio. Conclusión: En la dieta habitual de los estudiantes universitarios chilenos, el pan constituye un elemento fundamental para el aporte dietario de vitaminas del complejo B, hierro, cobre y selenio; así como los lácteos para el calcio; las carnes y pescado para la vitamina B12 y el zinc; las verduras para la vitamina A y las frutas para la vitamina C.
